Vegetable Tortilla Pizza for One

Who doesn’t love pizza? It’s a convenient and quick meal that tastes delicious. Just because you had bariatric surgery does not mean you can never have pizza again—just maybe not the Chicago deep-dish version. Pizza can still be delicious without extra-greasy meat and a thick, doughy crust. Try this recipe for a simple pizza for one. The tortilla crust turns out extra crispy in the hot oven, and the seasonings give the vegetables lots of Italian flavor.

1 (7- to 8-inch) whole-wheat tortilla, such as La Tortilla Factory low-carb tortillas

1 teaspoon extra-virgin olive oil

¼ teaspoon dried oregano

¼ teaspoon dried rosemary

¼ teaspoon garlic powder or minced fresh garlic

¾ cup Roasted Tomatoes, Peppers, and Zucchini with Italian Herbs (here)

¼ cup shredded Parmesan cheese

¼ cup shredded low-fat mozzarella cheese

1 small handful arugula

1 Preheat the oven to 400°F.

2 Brush the tortilla lightly with the olive oil using a pastry or marinade brush. Sprinkle the oregano, rosemary, and garlic over the tortilla, and then layer the roasted vegetables across the tortilla.

3 Cover the vegetables with the Parmesan and mozzarella cheeses, and top the pizza with the arugula.

4 Carefully transfer the pizza directly onto the oven rack, and bake it for 10 minutes, or until the cheese melts, the tortilla edges are crisp, and the arugula is wilted.

5 Carefully remove the pizza from the oven, cut it into fourths for easy handling, and enjoy.

Ingredient tip: Make variations with different vegetables and seasonings. Try a Mexican pizza by spreading Pinto Beans and Cheese (here) on the tortilla and topping it with Taco Seasoning (here), cooked ground turkey, sautéed peppers and onions, and Cheddar cheese. If you are looking for something more traditional, add tomato sauce to the crust, then top with seasonings, cooked Italian turkey sausage, mushrooms, and onions.
