These lettuce wraps rival those at P. F. Chang’s but have far fewer calories and much less sodium. Lettuce wraps make an amazing and delicious appetizer, or serve them as a quick meal. They are packed with protein and flavor and are low in carbohydrates. Chinese food craving solved!
1 (8-ounce) can bamboo shoots, drained and minced
3 tablespoons apple cider vinegar
1 tablespoon creamy natural peanut butter
2 teaspoons low-sodium soy sauce or Bragg Liquid Aminos
2 teaspoons sriracha hot sauce
2 teaspoons honey
Nonstick cooking spray
1 cup chopped onion
1 tablespoon minced garlic
½ pound ground chicken breast
1 teaspoon minced ginger
1 teaspoon sesame oil
8 leaves iceberg or butter lettuce
1 scallion, chopped
1 small cucumber, cut into strips
1 In a small bowl, mix together the bamboo shoots, apple cider vinegar, peanut butter, soy sauce, sriracha, and honey until well combined.
2 Place a medium skillet over medium heat and coat with cooking spray. Add the onion and garlic, and sauté until the onion is soft, 3 to 4 minutes.
3 Add the ground chicken and ginger, and cook until the chicken is no longer pink, about 5 minutes.
4 Stir in the sauce mixture and continue cooking for 2 minutes, or until heated through. Stir in the sesame oil.
5 Remove the skillet from the heat, and divide the mixture evenly among the lettuce leaves.
6 Top each wrap with some scallion and cucumber and serve immediately.
