Vanilla Cheesecake Parfaits

MAKES 4 PARFAITS / PREP: 30 MINUTES / TOTAL: 30 MINUTES

Bite into a freshly picked strawberry, blueberry, or blackberry at the height of their harvest, and you experience an explosion of sweet and tart in your mouth all at once. These berries are the perfect accompaniment to a creamy cheesecake filling. This recipe uses tofu as a hidden ingredient to give the creamy texture without adding extra fat and calories. To serve, make sure to use clear glasses—I like to use a stemless wine glass or water glass—so you can admire the beauty in the berries!

¾ cup low-fat plain Greek yogurt

3 ounces silken tofu (about one-fifth of a 16-ounce package)

¾ teaspoon powdered stevia extract

2 teaspoons vanilla extract

1 cup blackberries, cut into thirds

1 cup strawberries, stemmed and quartered

1 cup blueberries

4 fresh mint leaves

1 In a large mixing bowl, use a hand mixer on medium-high speed to beat the yogurt, tofu, stevia, and vanilla until creamy, fluffy, and completely smooth.

2 Prepare 4 small (8-ounce) glasses to layer the parfaits in.

3 To create the parfaits, layer the blackberries in the bottom of the glasses, layer a dollop of the yogurt mixture on top of them, layer the strawberries next, and layer another dollop of the yogurt mixture. Layer the blueberries, and end with a final dollop of yogurt mixture. Garnish each glass with a mint leaf.

4 Refrigerate until ready to serve.
