We all know we are supposed to fill up on fruits and vegetables throughout the day, but sometimes it’s uninspiring just to eat them plain. I often hear this complaint from parents who struggle to get their children to eat fruits and vegetables. Try this fruit dip to jazz up plain fruit and help you eat fruit more often. As an added bonus, you will even get some protein.
1½ cups low-fat plain Greek yogurt
½ cup creamy natural peanut butter
2 tablespoons honey
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 In a medium mixing bowl, use a hand mixer on low speed to beat together the yogurt, peanut butter, honey, cocoa powder, and vanilla just until smooth and well combined.
2 Cover and refrigerate overnight, or for at least 30 minutes prior to serving, to meld the flavors.
3 Keep chilled while serving.
Serving tip: Serve with fresh fruit such as apple, pear, or banana slices. Some patients may tolerate fresh fruit better post-op without the skin, especially when transitioning to fresh fruits and vegetables for the first time.
