Avocado-Lime Dressing

This rich and creamy dressing is perfect to top a fresh salad, jazz up plain chicken, add flavor to tacos or beef, or transform a boring turkey wrap into something extra tasty. Portion this dressing into small containers to take with you for meals on the go, or keep sealed tightly in the refrigerator for about a week.

½ cup water

1 very ripe avocado

¼ cup low-fat plain Greek yogurt

¼ cup chopped fresh cilantro

3 tablespoons extra-virgin olive oil

Juice of 1 lime (about 2 tablespoons)

1 teaspoon minced garlic

¼ teaspoon ground cayenne pepper

¼ teaspoon freshly ground black pepper

In a blender or food processor, puree the water, avocado, yogurt, cilantro, olive oil, lime juice, garlic, cayenne pepper, and black pepper on medium-high speed until the dressing has a creamy texture and there are no chunks.

Ingredient tip: Here’s the fastest way to peel an avocado:

Carefully cut the avocado in half with a sharp knife, rotating around the pit.

Gently twist the two halves to break it apart.

Using the sharp edge of the knife (not the point), stab the pit, and twist the knife to remove the pit. Discard the pit.

Scoop out the avocado flesh with a spoon.

Drizzle lemon or lime juice over leftover avocado to prevent browning, and store it in an airtight container in the refrigerator.
